Lemongrass Beef Skewers with Peanut Dipping Sauce

Ingredients

  • 2 pounds boneless sirloin

For the Marinade:

  • 3 cloves garlic, minced
  • 2 stalks lemongrass, trimmed of tough outer layer, sliced (often found in Asian markets)
  • 2 Tb sugar
  • 1 Tb soy sauce
  • 3 Tb thai fish sauce (often found in Asian markets)
  • 1 1/2 inch thick slice fresh ginger, minced
  • 1 jalapeƱo pepper, sliced
  • 1 Tb peanut or canola oil
  • Bamboo skewers

Instructions

  1. Slice the beef into long thin strips, about 1 inch wide, 1/4 inch thick, and 4 inches long.
  2. Thread onto bamboo skewers and set aside in a baking dish.
  3. In a blender, combine all the remaining ingredients and blend until smooth.
  4. Pour over the meat and let marinate 1 hour.
  5. Heat the grill to high.
  6. When the grill is ready, spray with non-stick cooking spray, and grill skewers 2 minutes per side.
  7. Remove from grill and serve with Peanut Sauce.
