Lemongrass Beef Skewers with Peanut Dipping Sauce
Ingredients
- 2 pounds boneless sirloin
For the Marinade:
- 3 cloves garlic, minced
- 2 stalks lemongrass, trimmed of tough outer layer, sliced (often found in Asian markets)
- 2 Tb sugar
- 1 Tb soy sauce
- 3 Tb thai fish sauce (often found in Asian markets)
- 1 1/2 inch thick slice fresh ginger, minced
- 1 jalapeƱo pepper, sliced
- 1 Tb peanut or canola oil
- Bamboo skewers
Instructions
- Slice the beef into long thin strips, about 1 inch wide, 1/4 inch thick, and 4 inches long.
- Thread onto bamboo skewers and set aside in a baking dish.
- In a blender, combine all the remaining ingredients and blend until smooth.
- Pour over the meat and let marinate 1 hour.
- Heat the grill to high.
- When the grill is ready, spray with non-stick cooking spray, and grill skewers 2 minutes per side.
- Remove from grill and serve with Peanut Sauce.
